I also throw in my own Shopify theme proven to convert at no extra cost, it's one I've used across a bunch of stores and it converts well.
Payment is split 50/50, half payment is required when **HALF** of the work is **COMPLETE** (this is so you get to check the store out, and see if your happy with it), and the other half is required when **all** the work is done. PayPal works best for me.
